    Today is 'Restoration of Independence Day' in our nearest neighbour, East Timor. Nineteen years ago today, the country was recognised by the UN as an independent nation after decades of occupation by Portugal, then Indonesia. We're serving East Timor Rujak or fruit salad. mango, orange, banana and watermelon in a sweet and spicy dressing containing chilies, palm sugar, fish sauce and lime juice. Topped with cream and nuts. (That might be a beer in the picture - leave it to you whether you have that as well.)
