    Today is Independence Day in Ecuador, marking the South American nation's liberation from Spanish colonial rule. Breakfast there comes in many forms, ranging from drinkable fruit salads to scrambled eggs, ceviche, tuna soup, plantain dumplings, empanadas and humitas.
