    Breakfast

    Today is the Day of Tribes public holiday on the Micronesian island of Nauru. The day celebrates the 12 clans or tribes that settled the island, according to traditional lore. With a population of less than 13,000, there are not a lot of restaurants on the island. I'm stretching the concept of breakfast to its limits with this delicious-looking coconut mousse. Ingredients include grated coconut, coconut milk, sugar, agar-agar, cream, egg whites and vanilla.
