We're starting the week in Turkey with a local breakfast staple called Kaygana. It's a kind of a cross between an omelette and a pancake. The base is a batter of eggs, flour, milk and salt fried in butter. After that, the only limit is imagination. Other ingredients might include herbs, bacon, mushrooms, anchovies, tomatoes, fetta, green onions or honey for a sweet twist.
