Summer hasn't really happened in my corner of the country this year, so we're taking a trip to Trinidad where summer never ends. We've a couple of Trinidadian breakfast classics. Aloo choka is an Indian-influenced bowl of potatoes spiced with ginger and hot peppers. Then we have Saltfish Buljol, a spicy blend of salted fish, tomatoes, hot peppers and onions often served on bread. (The more I research this stuff, the more I realise how bland our breakfasts are.)
