Today is Sandinista Revolution Day in Nicaragua, a public holiday to mark the overthrow of the Somoza dictatorship in 1979. Interesting that the day is still a public holiday, given the political turmoil that swallowed the country in succeeding years as the US and USSR fought a proxy war thought the Contras and Sandinistas. We're serving Nicaraguan Nactamales, a close cousin to the Mexican tamale. Ain't pretty but if they're anything as good as the Mexican version they'll be delicious. A maize dough is stuffed with potato, pork/chicken and a herb called yerba buena, then wrapped in plantain leaf for boiling.
