Today is the Icelandic National Day, a public holiday to mark independence from Denmark in 1944. It is a day of parades, speeches and general back-slapping. It is held on this date to honour the birthday of Jon Sigurosson, a leading figure in the drive for independence. (Huh - I just figured out where the band Sigur Ros found their name.) We're going healthy today with Skyr, a mild yoghurt that has been part of Icelandic culture (no pun intended) for centuries.
