Today is Africa Day, a public holiday in many parts of that continent. This day, formerly known as African Freedom Day or African Liberation Day, marks the formation of the foundation of the Organisation of African Unity. We're serving a Malian treat called Maasa - a type of pancake doughnut made with rice flour and sold from street stalls.
