Our tour of the world's great breakfasts has reached that haven of fine cuisine, Scotland. Gulp. You're looking at a plate of Kedgeree, one of those bastardised versions of Indian cooking popular in the UK. This dish featured in Scottish cookbooks as early as 1790 and is believed to have been created for ex-colonials pining for a taste of India. What you get is rice, hard boiled eggs, parsley, curry powder, butter, sultanas if you're really unlucky, and some sort of smoked fish - usually haddock. It's not quite as awful as it sounds, but I'm sure the Indian blueprint was significantly tastier. Why has it endured in Scotland? It's considered to be a useful hangover cure.
