Today is the San Jacinto public holiday in Nicaragua, celebrating a battle in 1856 that helped preserve the nation's sovereignty. Self-proclaimed President William Walker, an American adventurist, and his mercenaries suffered a decisive defeat at the battle at the hands of Nicaraguan patriots, including indigenous natives fighting with bow and arrow. A "Full Nicaraguan" breakfast comes with Gallo Pinto - the national dish of red beans, rice and onion fried together in a skillet, sometimes in coconut oil. Eggs, tortillas and salsa are also standard.
