    Today is the Independence Day holiday in Bulgaria, marking that nation's liberation from the Ottoman Empire in 1908. We're serving a national breakfast dish called 'Princesses'. These are a type of grilled open sandwich topped with a mix of minced meat, cheese and egg. Not too pretty, but reportedly delicious.
