Here's a quick and tasty cake to make.
As our iced coffees are usually 600 ml,
and the mixed fruit is generally 750 grams, cut back on the flour,
around 1 1/2 cups. A very nice cake !
Use your favourite coffee flavour, and you can also cut back further
on the flour, for a moister cake.
Ingredients
750ml Iced Coffee
1kg mixed fruit
2 cups Self Raising flour
Method
Soak mixed fruit in the Iced Coffee for 24 hours.
Add Self Raising flour and mix well.
Bake in a lined 8 inch (20cm) square tin.
Bake at 150 degrees Celsius for 1 hour.
