    Get a side plate for starters.

    Take the tail off with a knife so as to get the most flesh possible and peel the shell off plus pull the sheet shoot out.

    Once you have the flesh on the cutting board, cut into 10mm scallops and lay them out on the side plate as flat as you can.

    Dice an onion and sprinkle over the cray (not the whole onion but whatever seems reasonable.

    Dice some tomato and add that on top (same as the onion, not heaps but whatever tickles your fancy).

    At this point you can add some garlic or whatever herb tickles your fancy?

    Then you cover the cray with a cheddar cheese, about half to a full cup.

    Sprinkle a teaspoon of Keens curry powder ( the orange can) over the lot and throw it in the microwave for 5 minutes on high.

    Don’t try to do 2 at once as it never works.

    If it is done well you will end up with a ring of dark burnt cheese around the plate.
    I would suggest that you throw the cray away and just eat the burnt cheese but most call me a Philistine for that comment

    That’s the way I find cray to taste the best but I do like cray pieces cooked in a Southern Fried Chicken powder as well.

    PS I’m a 3rd generation lobster fisherman so I can take the lobbie or leave it.
