The difference is in the antibiotics and chemicals passed from cow to milk. Links have proven the build up of farm chemicals used in the production of foods in humans. This is basically the main argument used by organic groups, people will make of it what they want. In regards to infant formula I'd suggest that the idea of organic eliminates the worry of any chemical used throughout the process. Given the Chinese milk scandal revolved around chemicals used I'd say the choice of organic would be obvious to some.
