Can anyone suggest anything? I am aware that I am getting very lazy indeed, re an evening meal. Hence, little eating by way of vegetables.
Anyway, I will try this recipe (see below). Spec? Well, it's optional which is just as well as I am not familiar with spec. Minimum preparation. And that is what I want.
HERO - BRUSSEL SPROUTS
Ingredients
500g Brussels sprouts
30g butter
100g speck, chopped (you can omit the speck if required)
2 Granny Smith apples, peeled, cored and chopped
125ml stock
Pepper
Method
Stem the Brussels sprouts, remove the outer leaves and cut in half lengthways.
Heat the fat in a large, heavy based saucepan over medium heat.
Add the speck, if you're using it, and fry until beginning to brown.
Add the sprouts and fry for 10 minutes, allow the cut face to brown.
Stir, add apples. Stir again, and cook for 5 minutes.
Deglaze the pan with some stock. Add the remaining stock. Reduce heat.
Cook covered for 15 minutes until sprouts are soft and stock reduced.
Season to taste.
