I am a qualified Chef, with a degree in Hospitality and have worked in many great places.
I have specialized in dietary meals for sports/fitness people, airline requirements and with much respect for the elderly such as yourself, :).
I once had the pleasure working in one of our most exclusive retirement homes, where the residents were still fine holistically but just old and had similar complaints like yourself. :)
So to answer your question, there are many ways to create and present a healthy tasty meal with chicken and potatoes. Below is an example, ...most people eat 50% of their meals through their eyes.
