fusion piri-piri chicken:
Blend some of the following in the food processor:
1 onion.
¼ to ½ cup tropical fruit juice.
The juice and zest of a lemon.
¼ dozen pieces paisley.
¼ to ½ dozen dashes Worcestershire sauce.
¼ to ½ dozen dashes soy sauce.
1 to 4 deseeded red chillies.
¼ dozen cloves garlic.
1 deseed red birds’-eye chillies if desired.
1 tablespoon white wine vinegar.
1 to 3 teaspoon brown sugar.
1 teaspoon smoked paprika.
1 teaspoon dried oregano.
¼ dozen dashes liquid smoke.
Marinate a chicken or chicken pieces in the above for at least 2 hours.
Barbecue on the charcoal webber with its lid on.
