    Fettucine Boscaiola

    Ingredients
    1 teaspoon extra virgin olive oil
    1 teaspoon minced garlic
    1 teaspoon basil
    1 teaspoon chives
    1? teaspoons parsley
    ? teaspoon coarse black pepper
    Pinch sea salt
    1 large brown onion, sliced into rings
    175 g bacon, sliced into strips
    100 g button mushrooms, halved
    600 mL thickened cream
    300 g fettucine, cooked according to packet instructions
    Parmesan cheese, thinly sliced
    Extra chopped parsley

    Method
    Heat oil, garlic and herbs in deep frying pan.
    Add onion and bacon, stir until onion starts to become translucent.
    Add mushrooms and stir occasionally until bacon and mushrooms start to brown.
    Stir in cream, then simmer for 10 minutes.
    Add parmesan cheese and stir.
    Turn heat off and leave to stand for a few minutes before serving.
    Recipe notes
    Serve with cooked fettucine, garnished with slices of parmesan, chopped parsley, and garlic or herb bread.
