I so adore ratatoulle. My husband made another moussaka this week, it was great. It lasted for 3 days, but the last day, he cooked a bunch of Swiss chard to have with it. I miss this so much as we always had heaps in the garden at the farm.
But I had totally forgotten about ratatouille........ I used to cook this very often. Must start again.
Spud shed often have massive aubergines for 99c, I prepare them the same as you, sprinkle them with salt to get the sour flavour out, totally delicious.
I taught my Australian friend how to make this and several years ago, they rented a massive house in France and we were invited and I was pleased to see that she cooked it there, most impressive.
