Do you remember Margaret (maybe you are too young) that people used to make hard-boiled eggs, remove the yokes and mash them with all kinds of things, and then put them back into the whites? Those stuffed eggs did look festive around the edges of a platter. That mayonnaise was something used in stuffed eggs. Indeed, I am now giving myself some ideas for the next church BBQ, lol. (Yes, that was me, many years ago. My sister and both siblings were all dark-haired and dark-eyed.)
I would use the mayonnaise and then sprinkle the top with the paprika....would make a change from potato salad which several people made for last evening, although mine did all get eaten which is excellent for the "cook". Mind you, I was helping to serve and kept reminding my friends that "this one" is the best...and of course I pointed to mine and they obligingly loaded it on to their plates.
