Barg and Margaret; I have fussy kids, too - remember eating almost anything when growing up. Have eaten and liked liver, kidney, brains, sweetbread - which is delicious, it's a neck gland in young animals but dies off, but has a nutty meaty taste but is quite tender.
chicken legs, necks etc. are great for soups, they make jelly, bones should never be thrown out but used to make soup.

My kids freaked out one day, when I was attempting to make meat jelly by cooking half a pigs head in a large pot and they opened the lid and saw what's in it. this is years ago - one became a total vegetarian, the other is now on mostly vegetables, but chicken twice per week and my youngest is into meat. I can do without much meat, have learnt to eat sparingly now, especially now, as my host is a one-meal day person - and it's practical, especially when travelling.

I do not remember my parents or their peers being so fussy, cliquey - whatever about food - find it actually annoying, especially when catering for my family, but do it, anyway. We all need bad times, so we can appreciate what G.d gave us so freely.
