@Justis - I have - reluctantly - admitted commercial tomato sauce into my pantry - I buy a good quality one which is gluten-free and does not have that extra sweetness which comes from the massive amounts of corn sugar added to most things.
The brand is: 'Ozesauce' - Australian All Natural Tomato Sauce, gluten-free - and it is very nice and has a natural flavour, not too sweet.
Just think of the combination of the most
popular Italian foods - they are usually served in
tomato sauce - if in the old housewife tradition, then the tomato sauce would be home-made.
Despite not being Italian my mother always had a good supply of self-made tomato sauce, in glass, which she used in soups or as a base for sauces. (I hated tomato soup, to which she always added tiny bits of pasta or rice, but loved the capsicum dish ) - She had a special trick to that sauce, in particular when she cooked stuffed capsicums (and they had to be green and bitter capsicums) - she made a pre-sauce with browned sugar (very carefully, so as not to burn the sugar) - and somehow incorporated a bit of flour into this and then there would be the homemade tomato sauce on top of that.
- I have tried to do this numerous times, but always manage to burn the sugar - but still remember the taste of the caramelised sugar fondly. I think that is what the 'normal' tomato sauce is trying to emulate, but it simply has extra sweetness. But people don't really care - we should be happy to have enough cheap food available for everyone.
