Yes I am familia with skinning the prickly pear, easy when the prickles are off.
Just thinking with your method of skinning without getting the prickles off need to be carful no prickles get on the fruit.
My current method is welders gloves to get the bulk of the prickles off then rub with sand. Leaving them with the skin on gives them a longer shelf and fridge life
