It is surprising how so many things are undervalued, P.
With fish on my side of the Island, Dhufish, Bluebone or Pink Snapper are considered the only 3 worth talking about/eating (it is an example only not a true truth) but there are many others that are delicious. It’s just that most people don’t know what they are or have never caught them.
Just like woods, they only know the few basic types and so they believe everything else must be rubbish. Sure, it isn’t possibly as ease to prepare, it may not suit a wide range of jobs and it may be a bit more difficult but that doesn’t detract from the good bits.
Even the wood that blocks the flue is okay as long as you remember to check it and clean it on a regular basis.
