    there’s a secret to fish stew

    I discovered it in Tassie years ago.
    There’s a tiny red fish you catch when you’re drifting for flathead off Northern Tassie in Bass Strait and you drift off the sand and over the rocks

    you can feel it and at the same time, you might catch these annoying little red fish.

    Then you find out that the French chefs in Sydney spotted the same little fishes and they were used as bait. And the froggie chefs went crazy.

    Then you go to France and you see the same, or very similar looking little fish in fish markets and poooof - magically, there are the chefs again - buying these little fish

    they turn soups into heavenly soup.

    I’m sorry that I’m not certain of the name- but I suspect they are a type of gurnard

    beware if you try it

    Fish soup will never taste the same again if you can’t source the little red fish
