Lobster and / or prawn sauce:
Remove two servings total of raw lobsters and / or prawns from shells.
In a pan fry the shells to make stock in a splash of olive oil and a few knobs of butter.
Then add the following:
Two cups of chicken stock.
½ glass of white wine or a few splashes of brandy.
½ dozen cloves pressed garlic.
¼ dozen anchovies.
A splash of soy sauce.
A pinch of seafood seasoning.
½ teaspoon of tomato paste if desired.
Thicken slightly with corn flour.
