Blend:
One onion.
One carrot.
One stick celery.
½ dozen rashes smoked panchetta.
In a pan fry to brown:
Add the following and simmer for five minutes:
2 cups stock.
½ cup red wine.
1 can diced tomatoes.
¼ cup tomato paste.
½ dozen cloves pressed garlic.
2 tablespoons dried oregano.
2 tablespoons worcester.
2 tablespoons soy.
Peel of half an orange.
1 tablespoon scrimp sambal.
½ dozen anchovies.
3 bay.
Turn off and add the following:
500 gm veal mince.
2 tablespoons milk.
Serve with firm to the bit pasta.
Alternatively serve with a few sheets of pasta and white sauce.
