Crisp with tuna:
In a medium bowl whisk the following:
4½ tablespoons flour.
2 teaspoons brown sugar.
½ teaspoon salt.
Then add egg white and continue to whisk.
Bake on baking paper at 175 for 8 minutes:
Serve with the following:
4 ounces sliced or diced smoked salmon.
1½ teaspoons very finely chopped shallot.
1½ teaspoons dill.
¼ teaspoon finely grated lemon zest.
½ cup crème fraiche and cream.
