Fish with salsa

Make salsa with the following:

2 cups of coarsely chopped peeled peaches or / and mango

½ cup finely chopped red capsicum

½ cup of chopped tomatoes (optional)

1/4 cup finely chopped onion

1/4 cup chopped arugula / rocket (optional)

1/8 cup lemon or lime juice

A little zest (optional)

1 tablespoon chopped fresh oregano

1/8 to 1/2 deseeded and mince habanero pepper

1 clove of minced garlic

Season four fish fillets with:

½ to 1 teaspoon of paprika or jerk or cajun or blackening seasoning

1 clover of minced garlic

black pepper to taste

sear well on one side and less on the other

and

serve with the salsa
