Lightly marinate the following:
400 gm fish fillets sliced if desired.
¼ cup rice wine.
3 tablespoons Doubanjiang (Sichuan-style fermented chili bean paste) or the like.
1 tablespoon soy sauce.
1 tablespoons corn flour.
2 teaspoons Sichuan pepper.
2 teaspoons ginger cut in match sticks.
1 teaspoon pepper.
a pinch of salt.
In a pan also lightly fry in ¼ cup vegetable oil.
Also separately fry the follow:
2 sticks sliced celery.
6 garlic cloves
2 sliced spring onions.
½ cup bean sprouts.
⅓ cup or less dried red Chinese chilis.
