    Mexican Shrimp Bisque:

    Shell 1 kg raw scrimps.

    Fry shells with one packet of chicken necks.

    Add 3 cups water.

    in another pan fry the following:
    ½ cups chopped onion.

    Then add the following:
    The stock.
    The scrimp meat.
    ¼ dozen press garlic.

    And the following if desired or other Mexican spice mix:
    ½ teaspoon ground cumin.
    ½ teaspoon ground coriander.
    1 teaspoon thyme.
    Smoked tobacco sauce to taste.

    Heat and thicken slightly with corn flour.

    Serve with:
    ½ cup cream.
    ½ cup sour cream.
