We now have become to know that the flake thickness is another important factor on top of the flake size and the purity. I quizzed Frank Houllis on it out of curiosity. This is what he said:

Good flake thickness means fewer irregularities in the graphite crystals in the ore. It is usually associated with easier processing to obtain high purity products at good recovery and with excellent electrical and thermal properties. In other words, it is easier to make a wider range of high quality premium priced products if end users have thicker flake to begin with.
