Your are assuming the flat earth has a third dimension i.e the edge has thickness. Centripetal force binds the water to the disc.
I am a self professed flat earther :- that's right I still buy and play LPs and the tone arm always tends to the centre of the platter. Same with Harddrives, CDs and DVDs it just makes sense.
