Veal Marsala:
Bring to a simmer the following:
2 cup chicken stock.
½ cup marsala.
¼ cup rendered beef fat.
1 teaspoon of mushroom powder.
½ teaspoon onion powder.
½ teaspoon garlic powder.
¼ teaspoon rosemary or one piece of rosemary.
Serve with lightly seared veal and one egg yolk mixed in a ½ cup cream.
