Maybe if that is the case.
However, there is no great money in commodity markets unless you are a big volume player.
The Camperdown products labelled Free Range and (low fat) Jersey milk are obviously pitched at niche markets.
I would have thought them to be 'not large'.
From my childhood experience on farm (when parents had some cows -- mainly for beef calf raising, but raided for our house milk as well), it was the Jersey cows which produced a milk with high fat (cream) levels which was preferred in by our family. Unless things have changed 'low fat jersey' milk sounds like an oxymoron.
To many of the 'urban punters', sadly, I doubt if they would know the difference between a Jersey and a Holstein and most wouln't even know that cow needs to be lactating following production of a calf in order to produce milk.
Still involved in farming, but not with cows .....
Would love to see this co do well .....
