I'm so full. I only had half a breast as well. Took the photo and was about to put into oven to melt
the cheese but it started melting anyway. Poured some of the sauce over the top helped.
Saw a few variations in cooking this. I cooked the onions in butter first with a couple of shots of beef bouillon and then took them out.
Halved the chicken breasts and rubbed them with oil, seasoned with salt and pepper, then some thyme.
Cooked them not overdone though. Then poured in some beef bouillon and more seasoning. Put in a tablespoon of flour to make sauce and then put the onions back in. Once sauce thickened I put the chicken back in, spooning the sauce over the top while cooking. Then put the cheese slices on and sprinkled some parmesan cheese as well.
Next time I'll make the french onion sauce and freeze a few batches to make the cooking time faster. I have to make some more stocks to freeze

Funny thing was hearing my husband say it smelled amazing and then realised I had lost my sense of smell!
Happens sometimes. Anyway, the first taste was amazing.
Will try another variation to this one.
