Had a win on this tonight....was delicious in a salad...planned on cooking chicken tikka on skewers and bought chicken thighs ...didn't want uneven bits so cut the thin fatty end off the thighs and the fatty edge off the other end and fried these off cuts in hot peanut oil also putting them under the griller midstream to evaporate off some juice ...heavily peppered and salted and then when nice and browned slightly shredded into salad with olive oil lemon juice and some balsamic...was great.
Got the other bigger lean pieces marinating over night in tikka sauce lime juice and yoghurt...for tomorrow night..
