Truffle dressing:
In a small bowl combine the following:
3 tablespoons / 15 gm black truffle paste.
2 tablespoons hazelnut or walnut oil.
2 tablespoons concentrated chicken stock.
½ to 1 tablespoons Sherry vinegar.
½ to 1 teaspoon lemon juice.
And ‘some; of the following if desired:
1 tablespoon minced cappers.
1 dessert spoon sesame oil.
1 or 2 teaspoon anchovy paste.
1 or 2 teaspoon runny honey.
1 or 2 teaspoon soy sauce or sweet soy sauce.
1 or 2 teaspoon fish sauce.
½ teaspoon Dijon mustard.
¼ to ½ dozen splashes Worcestershire sauce.
¼ to ½ dozen splashes xo sauce.
Serve on meat or vegetables.
