    Scrimp fried rice:

    In wok rry ¾ cup of raw scrimps coated in rice flour and fried in a cup of oil.

    Drain and set aside.

    Then fry 4 cups of cold cooked rice and two beaten eggs in a little oil on high heat.


    Constantly stir and flip.

    When done.

    Add the following:
    The scrimps.
    Two chopped spring onions

    And season with the following:
    Xo sauce to taste.
    Soy sauce to taste.
