About to make a fruit cake. New recipe, so result will be interesting.
! X pkt. of mixed fruit
600ml carton of iced coffee.
2 X cups Self Raising flour.
Soak fruit in bowl/container with the iced coffee for 24 hours.
Add flour and mix.
Use any shape cake tin you like, and bake at 180 degrees 'till cooked.
Will let you know later tonight what it is like.
