    cured salmon:

    The fillet of one side of salmon.

    Coat with the following:
    100 gm salt.
    100 gm brown sugar.

    And ‘some’ of the following:
    1 cup grated beatroot.
    ½ cup chopped dill.
    ¼ cup gin sake or vodka.
    Zest of an orange.
    2 tablespoon crushed coriander seeds.
    2 tablespoon cracked pepper.
    1 tablespoon crushed cloves.

    Wrap in gladwrap.

    Refrigerate for three days.

    Turn occasionally.
