Sticky chicken wings:
Marinate 1.5 to 2 kg chicken wings or other chicken pieces in the following for at least one hour:
½ cup barbecue eta hoisin oyster and / or tomato sauce.
¼ to ½ cup light soy sauce.
¼ to ½ cup tablespoons honey maple syrup or glucose.
⅛ to ¼ cup dark sugar.
and ‘some’ of the following:
1 minced onion or a few minced shallots.
¼ cup of whisky brandy sherry sake and / or mirin.
1 tablespoon grated / pressed ginger.
1 tablespoon sesame oil.
1 tablespoon zest.
2 squeezes of orange juice.
1 to 2 dessert spoon worcestershire sauce.
1 to 2 teaspoons minced garlic.
1 teaspoon of lime juice or balsamic vinegar.
1 teaspoon five spice powder.
½ to 1 teaspoon of smoked paprika or chili.
2 splashes of liquid smoke.
