    Roast pork beef lamb or chicken:

    Brim 1.5 to 2 kg pork or other meat in the following for at least 1 hour:
    3 cups warm water (1 tablespoon salt to 1 cup water).
    3 tablespoon salt.
    A few pieces pressed coriander roots if desired.
    2 tablespoon rice wine.
    2 tablespoon hoisin sauce.
    2 teaspoon pressed ginger.
    2 teaspoon or more of brown sugar.
    1 teaspoon Chinese five-spice powder.

    Barbecue confit or roast.
