    Fusion Szechuan beef:

    In a very hot pan lightly sear:
    400 gm beef stir fry.
    1 dessert spoon sesame oil.

    Serve.

    In the same pan make the sauce by simmering the following
    for a few minutes:
    4 tablespoons mushroom soy sauce.
    1 or 2 spring onion thinly sliced
    2 tablespoons brown sugar.
    1 tablespoon pressed ginger.
    1 tablespoon mirin.
    1 tablespoon rice wine vinegar.
    2 cloves pressed garlic.
    1 dessert spoon hoisin sauce.
    1 teaspoon crushed red pepper flakes or 3 whole dried chilies.
    ¼ to 1 tablespoon Sriracha or other hot sauce.
    ¼ teaspoon Chinese 5 spice.
    A splash of liquid smoke.

    Then thicken slightly with ¼ cup water and corn flour.

    Serve the beef with sauce rice and stir fried vegetables.
