    Lamb shanks:

    In a large saucepan fry the following to brown:
    4 lamb shanks.
    2 diced onions.
    1 stick diced celery or capsicum.
    A splash of oil.

    Simmer with the following for at least an hour:
    750 ml stock.
    250 ml white wine.


    And some of the following:
    1 can chopped tomatoes.
    1 cup dried apricots.
    ¼ cup tomato paste.
    A few sprigs of rosemary or other herbs.
    3 tablespoons light soy sauce.
    2 tablespoons of Worcestershire sauce.
    1 to 2 dessert spoon harissa or other paste.
