    Fish with parmesan glaze:

    Place 2 single servings of fish fillet on two serving dishes.

    For the glaze in a small bowl mix the following:
    150 ml cream.
    3 tablespoons parmesan.
    1 egg yolk.
    A few splashes sake.
    A few splashes sweet soy sauce.
    ⅓ teaspoon miso.
    A splash of smoked tabasco.

    Pour half on each serving.

    Lightly barbecue on the charcoal webber with some wet wood chips and its lid closed.

    It is good to place dish on tiles or slates to shield from flames and heat.

    To get more of a crust finish with a cooking torch if desired.
