fusion ceviche:
Arrange on four serving plates or one large serving plate:
4 fish fillets sliced into sashimi.
And ‘some’ of the following:
1 small red onion, very thinly sliced.
1 long red chilli.
2 pieces chopped fennel leaves.
2 tablespoons pomegranate seeds.
1 tablespoon roughly torn coriander leaves.
1 tablespoon small mint leaves.
Dress with ‘some’ of the following:
½ cup grapefruit or orange juice.
2 tablespoons lime juice.
2 tablespoons olive oil.
1 tablespoon fish sauce.
1 tablespoon sweet soy sauce.
1 dessert spoon sesame oil.
Serve with smoked tobasco sauce or xo sauce.
