Salt and pepper prawns
Lightly coat four servings of raw shelled prawns (leave heads and tails on if desired) with the following mixture:
1 tablespoon sesame oil.
1 tablespoon rock salt.
1 tablespoon cracked Szechuan pepper.
And ‘some’ of the following if desired:
1 tablespoon sake.
1 tablespoon xo sauce.
1 dessert spoon black bean paste.
1 dessert spoon white miso.
1 teaspoon dried chilli flakes.
½ teaspoon splashes smoked tobacco sauce.
½ teaspoon dried chili flakes or jerk paste.
1 splash black or balsamic vinegar.
Pepper to taste.
Then coat with the rice flour cornflour or the like if desired.
Fry in 5 mm oil or alternatively barbecue on the charcoal webber on one side and seal on the other side only.
¾ cook only.
