Fusion wonton laksa:
Bring in a medium saucepan simmer for at least five minutes the following:
3 cups chicken or prawn shell stock or water and 1 packet of chicken necks.
¼ to ½ cup coconut cream.
1 tablespoon laksa or red curry paste.
and 'some' of the following:
1 diced tomato.
1 serving of asian greens.
2 cloves smashed garlic.
a good sprinkling of japanese fish flakes.
finely grated zest of ½ lime.
1 tablespoon soft brown sugar.
1 dessert spoon finely grated fresh ginger.
1 dessert spoon brown sugar.
1 dessert spoon fish sauce.
1 teaspoon prawn sambal paste.
½ teaspoon jerk paste.
A few splashes of rice wine.
A few splashes of light soy sauce.
Served with wontons.
