    Fusion Spanish rice paella:

    In a pan fry a the following until it starts to caramelise.
    A large diced onion.
    A diced capsicum.
    A few knobs of butter.
    A few knobs of duck or goose fat.

    Then turn up the heat and add the following and lightly brown the following:
    Two Chinese dried sausage.
    One diced chorizo.

    Add the following and simmer until the rice is cooked.
    1 litre of water.
    300 gm paella rice.
    Simon gault concentrated chicken and fish stock to taste.

    And add 'some' of the following:
    ½ cup unsalted dried sea food.
    ¼ cup sherry.
    1 tablespoon anchovies.
    1 tablespoon a capers.
    1 or 2 tablespoons tomato paste.

    1 to 3 teaspoons sweet paprika.
    1 to 2 teaspoons ground turmeric.

    Three splashes light soy sauce.
    Jerk paste to taste.
    A pinch of saffron.


    Serve with seared seafood.
